Buying Policy

We are passionate about using local fresh produce. Our menus reflect seasonal availability and do, therefore, change with the seasons. We source Cornish produce where-ever possible, buying direct from local farmers and butchers. Where wholesalers are used they have been selected because of their ability to assist us in our Cornish sourcing policy. We do not claim to use 100% Cornish produce as this would, with seasonal changes, limit the opportunities for our chefs to create interesting dishes. Cornish Winter vegetable broth with chefs own crusty bread (v)

Goujons of locally caught Sole, mixed leaves, served with a sweet chilli mayonnaise

Mushroom & St Anthony's Goats Cheese, lentil dressing on a crisp garlic crostini

Free range chicken, tarragon and chestnut terrine with onion marmalade & wheat wafers

Roast topside of Cornish Beef, Yorkshire pudding, roasted Cornish potatoes,new potatoes and horseradish gravy

Roast crown of Turkey with a sage and walnut stuffing, kilted sausages, Yorkshire pudding, roasted Cornish potatoes, new potatoes and a cranberry gravy sauce

Oven baked Cod Loin steak with a herb crust with a preserved lemon and caper berry sauce served with Cornish new potatoes

Baked aubergine stuffed with a white bean and mushroom ragout served with Cornish new potatoes (v)

All main courses served with a fresh seasonal vegetable platter

Deep fried Cornish Brie in a light sesame crumb with cranberry and orange relish (v)

Slow braised free range Cornish beef steak with a caramelised shallot, smoked bacon and Madeira sauce

Slow roast Cornish rare breed pork with hog's pudding with caramelised apples and a Madeira shallot sauce
